At Lambert-St. Louis Airport, Your Leftovers Head for the Compost Pile

Airports go through a lot of food. From Sbarro slices to more classy dining options there’s a lot of stuff being made, consumed, and thrown away at airports across the globe. We’ve seen hubs get in on the green movement, and now it looks like the airport over in St. Louis is the latest to do so. However, they’re doing a lot more than just sticking out a special bin for your left over soda bottles.

Lambert-St. Louis International Airport just announced a new food recycling program. Don’t worry—they’re not reheating and reusing other people’s discarded foodstuffs. What they are doing is making use of food both from customer’s leftovers and the discards during the cooking and preparation process.

The plan is pretty much to fill up a giant compost bin outside the airport, and eventually airport officials would like to utilize the fresh dirt in local farms and gardens. We kind of want them to take the additional step and plant some flowers—or even some veggies—right outside of the terminal.

The airport is partnering up with HMSHost to run the program, and in total there’s four restaurants participating in the recycling. So if you’re chomping down a pre-flight meal at Beers of the World, Pasta House, Brioche Doree, or Chili's Too, rest assured that you’re leftovers are going to a good place.

Finally, the airport does donate all the edible leftovers to local food banks and shelters; they’re not just tossing out totally good food, it’s only the scraps.
