The Pop-Up Restaurant Craze Pops Up All over the U.S.

Last week's restaurant wars episode of Top Chef has inspired cheftestant Dale Talde to use the bodega-inspired idea to open his own pop-up restaurant in an old warehouse in New York's Bowery. Pop-up restaurants are the latest food craze. Only open for a short time, these roving restaurants allow chefs to get creative and test out ideas. Though because pop-ups are temporary, it can be hard to snag a seat.

Try these pop-ups across the USA, before they close:

· Boston
Beantown saw its first pop-up with Eat from chef Will Gilson from gastropub Garden at the Cellar and Eat Boston entrepreneur Aaron Cohen. Their last pop-up served a coffee-themed dishes, including a parsnip and potato "latte" and coffee-rubbed pork tenderloin. Sign up for updates, since Eat will pop up in Boston 'hoods monthly.

· Los Angeles
Top Chef Master contender may have perfected the pop-up concept. His LudoBites roving restaurant has quite the following among foodies. It's been around since 2007, serving original French-influenced food like deconstructed mussels veloute all over L.A. But his specialty is chicken, so order it if it's on the menu.

· New York
Chef John Fraser of Dovetail will open What Happens When on January 25 for a nine-month stint. The pop-up will serve market-driven cuisine, though the menu theme and restaurant decor will change monthly. There also may be some entertainment, since Fraser is considering having a marching band perform.

· San Diego
Relate, San Diego's first pop-up, will open at St. Germain’s Café in Encinitas February 3 to 26. The restaurant will serve contemporary French food with a down-home American touch. Chef Dan Moody, who prides himself on being the authority on relationship-related cooking advice, trained under Ludo Lefebvre.
