For May and June, Lufthansa's menu sounds better than what you'd find in a five-star restaurant. Here are some of Stromberg's choices for in-flight cuisine in the top classes:
First Class hors d'oeuvres:
· Mousse and salad of green and white asparagus
· Breast of quail on mango and peperonata chutney and potato terrine with white chocolate
· North Sea shrimp and lettuce jus with parsley oil
First Class main course:
· Veal with cocoa, rhubarb, shallot compote and potato gnocchi
· Olive and brittle-crusted black halibut, orange and peppercorn sauce, leaf spinach and Parisienne potatoes
· Coq au vin of spring chicken, pearl onions, parsley puree and Venus rice
First Class dessert:
· Woodruff and prosecco jelly with white chocolate mousse and fresh berries
· Strawberry and coconut tartlet with passion fruit coulis served with vanilla ice cream
Business Class hors d'oeuvres:
· Rolo of free-range chicken with sel rosé, creamy kohlrabi salad and blueberries
· Marinated salmon topped with watercress and cream cheese, celery and apricot salad and blossom sauce
Business Class main course:
· Beef roulade Gasthaus Stromberg-style filled with vegetables in jus, onions marinated in red wine and potato mash
· Pike perch with caramelized beluga lentil stew and millet galettes
· Ravioli filled with cauliflower and Parmesan cream, cashew nut, macadamia nut and Pecorino cheese pesto and caramelized garlic
Business Class dessert:
· Elderflower cream with Indian long pepper and rhubarb compote
· Fruit salad with lychees and pistachios
Second meal on some westbound flights:
· Holger Stromberg's famous curry sausage with spicy potato wedges
· Vegetarian lard Waltrop-style on pumpernickel bread.
