Big Star's queso fundido

While New York goes through food obsessions every few months (it's cupcakes and then it's pork belly and then it's banh mi), Chicago prefers to idolize specific ethnic restaurants, where one or a few dishes completely stand out and really make the dining experience.

When we were in Chicago recently, we heard the same couple curious words all over the place: "Queso Fundido." Why was everyone talking about melted cheese so excitedly, and where could we get some? As it turns out, the Queso Fundido currently tempting the palettes of Chicago is what's on the menu at hipster taco joint Big Star, in Chicago's Wicker Park neighborhood.

There's a line out the door all night on the weekends, so we stopped in at midnight on a Monday and found a tiny spot at the back to sample the talk of the town. The $8 Big Star Queso Fundido is melted cheese from Chihuahua (not the dog, the region), rajas poblano, housemade chorizo and fresh tortillas. Washed down with a Modelo and then a Dulce de Leche milkshake, it's the perfect late night treat. The taqueria opened last November, so this is their first spring and—when the weather gets right—their first al fresco summer with their huge front patio area. And that's Chicago for ya—keepin' it simple and keepin' it tasty.

Gooey goodness

The queso fundido is amazing at Big Star, as is the dulce de leche milkshake. Yum.
