That’s why you’ll find Top Chef judge extraordinaire, Tom Colicchio, and all-round international culinary star, Marcus Samuelsson, the Ethiopian-born, Swedish-raised chef behind such dining hotspots as Aquavit and Merkato 55 in New York, and the Affinia Chicago’s C-House headlining the upcoming Barbados Food, Wine, and Rum Festival from November 19-22. Other food luminaries will be British wunderkind and offal advocate Fergus Henderson from London’s St. John restaurant, and foodie TV personality Ming Tsai.
On Sunday, Marcus Samuelsson and Fergus Henderson are giving their cooking demonstrations in the afternoon, while Tom Colicchio is hosting a blowout dinner at The Cliff restaurant. Monday brings another chance to sample the “Rhythms of Rum Cuisine” at St. Nicholas Abbey while learning about life on a rum plantation back in the day, as well as modern-day food-rum pairings.
