There's an easy answer to the "why airports?" question: Parker's partner Todd English has gotten no small amount of praise for his airport-restaurant ventures like Olives at Boston's Logan Airport and JFK. But Eva, do you really want your cuisine associated with massive delays instead of flashbulbs? Better off in America's malls, where if people don't like the food they can leave.
