Aging Gracefully: Monastery Turned Cheese Factory

They always say you don't really want to know how your sausage is made, and we suspect the same might be true for cheese. But we'll try anything once, which is why we're making tracks for the Schaukaeserei Engelberg cheese factory in Switzerland, the first factory we've covered so far that comes complete with a bistro.

The factory is located inside a monastery where alpkäse or traditional "alpine cheese" has been produced since the 1100s. Now the old sacred buildings have been refitted as a modern factory where cheese is still ladled by hand into the ancient molds and aged in naturally cooled underground rooms. The bistro offers cheese tasting menus as well as quiche, fondue, and some "cheese-based desserts" which we can only imagine.

The cheese is made from 11AM to 4PM, so you won't need to get up early to pick up some delicious views. Entrance is free for all the dairy rubberneckers out there.
