Today we introduce our Eat n' Sleep feature where we profile a restaurant in a random city and a hotel nearby. It's kinda like that old show "Dinner and a Movie" but you know, with restaurant and hotels. And better jokes.

Everyone has different reasons for visiting Las Vegas--gambling, five-star dining, Cirque du Soleil shows, quickie marriages, topless revues, etc. etc.--but sometimes the Strip is just so overdone.

At HotelChatter we recently hit up the Red Rock Resort & Spa, about 20 minutes outside Las Vegas in Summerlin. Lo and behold, we found out this is where the people of Las Vegas would rather kill their time rather than the madness of this tourist-cluttered strip.

And just because you can't see the tower of the Stratosphere here, doesn't mean there aren't any fine dining options around. For one, there's the Vintner Grill which is the only restaurant in the world to offer an Exotic Truffle Tasting Flight featuring Vosges Haut Chocolat. Haut indeed.

The Red Rock Resort & Spa is a new hotel casino that opened in 2006. We spent some time there in May and needless to say we loved it. There's no trashy people getting drunk at the pool, each room is clean, modern and spacious, and there's even a hip nightclub, Cherry. More importantly, while the hotels on the Strip were an absolute zoo that weekend, we could walk around Red Rock in peace.

The Red Rock has several dining options including an excellent steak restaurant, TBones, but the Vintner Grill is just down the road for when you feel like escaping the resort for a little while.

Vinter Grill is owned by Sin City's experienced restaurateurs Michael and Sean Corrigan who are behind the Road Runner Saloon chain. But they've branched out into an more upscale experience, using interior designer Paul Duesin to create the modern space for Vinter Grill.

The menu, which changes daily, was designed by Chef Matthew Silverman and features "contemporary American dishes with Mediterranean influences."

The restaurant also has a personalized wine selection (created by Troy Kumalaa) that features 120 vintages from 10 distinct countries including Germany, New Zealand, and Australia.

Now onto that Exotic Truffle Tasting Flight. Here is the selection of exotic truffles you can taste and each are paired with Vosges Haut Chocolat selections:

Olio d' Oliva (olive oil + white chocolate) with potato chips
Dulce de Leche (Argentinean caramel + cashew + milk chocolate) on a piece of smoked bacon

Naga (sweet Indian curry + coconut + milk chocolate) and corn nuts

Absinthe (Chinese star anise + fennel + pastis + dark chocolate) aside Indian fennel seeds

Black Pearl (Japanese wasabi + ginger + black sesame seeds + dark chocolate) atop wasabi peas

The Rooster (taleggio cheese + organic walnuts + vanilla bean + bittersweet dark chocolate) amongst cocoa nibs

Who knew fungi could be so tasty? The tasting prices are listed as so:
· 2 Truffles--$6
· 4 Truffles--$12
· 6 Truffles--$18.

For reservations call  702-214-5590 or book online to Vintner Grill's website.
