The Catskills' Borscht-less Resort

Livingston Manor, on the south boundary of the Catskills and about two hours north of New York, has seen a drastic turnaround in the past couple years, making it . . . trendy? It's already gotten the requisite Times profile, which approvingly noted its "bookstore . . . Japanese art gallery . . . designer coffee shop, [and] brand new TriBeCa-esque restaurant with the postmodern Catskill name of Resort." We're not exactly sure what TriBeCa-esque means -- lots of blond wood, perhaps? -- but we can say that this former farmhouse is a beautiful space, with a thoughtful menu that makes good use of local produce and meat. TriBeCa should be so lucky.
