Opened in 1997 by a pair of Frenchmen, Flying Fishbone was a welcome addition to the Aruban dining scene when it placed all of its tables directly on the beach--a first for the island. This is way more than seaside dining. It's more like sand-in-your-toes dining. The owners have even placed a few tables in the water so barefooted guests can dangle their toes in the tide--truly a dining experience like no other.
Fortunately the food is on par with the view. Featuring European cuisine with a Caribbean flair, the Fishbone offers an impressive lineup of fresh fish daily. For starters choose from favorites like the coconut shrimp salad with pineapple curry aioli or a bowl of creamy lobster bisque.
Entrees are no less impressive. The catch of the day is often mahi-mahi or grouper prepared with a spicy red-pepper sauce or you can opt for its simple yet succulent 10-ounce Caribbean lobster tail. Weekends are a perfect night to stop in, if only to catch the one-and-only Delbert Bernabela--a local saxophone player who belts out pop favorites and jazz standards. As if the restaurant needed more ambiance.
